The best five posts of 2021: ChasingLifeMoments blog! One year ago, I started a new tradition. I summarize each year with the top five posts from that year. It is the second article, following the initial one: Top 5 posts of the first year: Chasing Life Moments.

How was the second year of my blog? Active! I focused more on the qualitative side of the posts. My writing became longer and more detailed. I did not aim anymore to publish 52 posts, one per week. When writing a post of nearly 4000 words, like the Relocation to Bangalore one, I needed more time to build helpful and interesting, content.

It is the 40th post that I wrote in 2021! I am just finalizing and publishing it today. It is great! Every 9 days, a new blog post was available for you to read! Additionally, one new guest blogger, Make This a Journey, joined our authors’ community. Her article, Things you will love about Croatia, was so interesting!

I am sure that 2022 will be a wonderful year for all of us, beautiful and challenging. It will give us opportunities to grow, smile, and stay connected.

Mango pickle: today, I want to share with you the secrets of an authentic Indian recipe. It is a homemade pickle from an Indian house, our house. The recipe is not new, it is prepared by the next generations now. It brings a lot of memories, tasty moments, and smiles.

No matter where you are in the world, you should be able to prepare it at home. There is just one ingredient that is a must-have raw mango. Many raw mangoes!

MANGO PICKLE

Mango pickle, the most famous pickle, is a traditional Indian condiment. It is made with raw mangoes, spices, and oil. Although the name is the same, it is different than European pickle. Yes, it includes a lot of spices, many packets of spices.

People in India eat pickles as a side in many meals. They are eaten with dal and rice, dal and roti, parathas & some snacks, like mathri.

Indian cuisine is very diverse. Don’t be surprised that mango pickles can be prepared in many different ways. At our home, there are always two different types of mango pickles. One homemade and one bought Madras Thokku, by Mothers Recipe.

OUR LONG WEEKEND TRIP TO SANTORINI

Is a long weekend enough for visiting Santorini? Of course, when one is traveling, time is never enough! On the other hand, if you can visit Santorini for four days, you would enjoy it for sure! I love ‘compressed travels!

They give me a chance to experience a new place, to taste it, and leave the feeling of not enough, often wanting me to return one more day.

Our travel to Santorini, indeed, was a long weekend trip. We were lucky to get great plane tickets which allowed us to enjoy this Greek island for nearly four full days. You can explore WizzAir and Ryanair flight options in Europe. I was so happy to know that WizzAir started to fly from my city, Gdansk to Santorini on my birthday! The best gift!

Our flight to Santorini departed from Gdansk at 6 am. We landed in Greece at 10 am, enjoying over there entire Friday! On the way back, we had a late afternoon flight. It was a perfect time for a stay in Oia with the option of visiting twice Thira and once Imerovigli. What can one do in Santorini during a long weekend other than famous views and sunsets? 🙂

I have celebrated New Year, next to my two homes in Poland and India, in some of the European cities, like Paris, London, Barcelona. Still, my New Year bucket list and ideas are long! How about you? If given a chance, where would you love to celebrate it? Is it Times Square in NYC? Or maybe mountain chalet in Aspen or Zermatt? How about sunbathing in Maldives or Seychelles? Choices are many, just like dreams.

OUR SANTORINI TRAVEL

Our Santorini trip, surprise surprise, was a spontaneous journey. During our stay in Poland, we realized that the pandemic situation in Europe, at that moment, was a bit better. Additionally, our immune system, post our Covid-19 recovery, helped us decide: let’s travel abroad!

Till the last moment, we were undecided about the country and the dates. Malta or Greece, birthday weekend or the following one. I am super happy with our outcome: Santorini in Greece, four days travel, after my birthday. It was 6 of us traveling as we invited our parents to join us. I think that after the long 1.5-year pandemic standby, everyone was excited about this trip.

Since it was a bit more spontaneous travel, we had less time to explore thoroughly. So I thought it might be beneficial to give you some practical insight before your first travel to Santorini. These items shared below are based on our recent experience. Not all can be googled easily. Enjoy your Santorini travel preparation!
